I am going to put a new water pump in my 96 RMW and it has a temp coolant plug ,can I put a real(with numbers) gauge sending unit in that hole or splice into the wires from the plug ?

Yes, but... you already have a gauge that tells you the true water temp. It's in the HVAC head.
