Two inches is good, but you will probably have to remove the top bolt from your wheelhouse to the fender at the wheel opening for a little extra clearance when turning. The tires usually hit the bolt when turning, and it can wear a groove in your tread. I run 27 inch tires, and about 3 1/2 inch drop, so mine sits really low. I have about 2 3/4 inches of ground clearance. I even had to cut about an inch off of the airdam pieces so they would not drag on everything I go over.

I used 2 inch drop spindles (forget the brand, probably Belltech), and 2 inch springs with a one inch rubber spacer split in half lengthwise to raise it a half inch. The setup without the spacer was just too low, and hit almost anything I went over. I have 2 inch drop springs in the rear. That gives it a little rake. I just got it painted, so it is all the same color, including the roof rack, and looks shinier. I do not know if I could put 28 inch tires on it without severe interference with the fenders.

What is the actual tire size that you are running?

My 9C1 was lowered by the previous owner. Sprint springs in the rear, and Moog 5662 springs in the front with one coil cut off I believe? He said the sprints were too low in the front lol. I have 275/40/17 on SS wheels for the summer and the stock 225/75/15 for winter. It tucks a good amount of the stock tire, but I haven't had any interference issues with the "big" tires. I did gain a good amount of ground clearance with the stocks, which will help in the snow.

The 275/40/17s are only 26.1 inches tall. You get almost another 1/2 inch of fender clearance with them over a 27 inch tire. The bolt head is about 1/4 inch tall. I may try the 28 inch tires on both front and rear to get a little more ground clearance.

I'll chime in.  My car is currently lowered on Belltech Drop Springs and Drop shocks.  Rides well with zero scrubbing issues.  I'm running a 235/75R15 tire size.  I love the way it looks, but I do want to go lower.  Air ride kit was ordered last Thursday and will be installed very soon.
